Chochin Shuzo - Legendary, enigmatic, and brilliant

Chochin Shuzo is located at Tsushima City in Aichi Prefecture, approximately 16 km west of Nagoya City.  Founded in 1868, it is now in the hands of its sixth generation owner Ryohei Kuwayama. The brewery only sells directly to 30 liquor stores nationwide and a number of top restaurants in Nagoya, we are therefore truely honored to be able to bring their sake to you directly! 

Their flagship "Newspaper" series consists of unfiltered, unpasteurized sake released only once a year from each tank.  With a production of less than 2,000 bottles, these are one of the rarest sakes in Japan, one of its best kept secrets. Chochin's sake brewing is based on three pillars.
- A sake that can be enjoyed with food
- A sake that can be aged
- A sake that can be warmed or chilled

It is an amazing sake that doesn't deteriorate even when stored at room temperature, and whose flavour deepens with aging.

其旗艦系列「新聞纸」為無過濾、未火入的生酒，每年僅從每個釀造槽精選一批，產量不到 2,000 瓶，是日本最罕見、也最為人津津樂道的秘酒之一。長珍的酒造風格奠基於三大支柱：
- 能配餐
- 能陳年熟成
- 能溫飲或冷飲

這是一款即使室溫保存也不易變質，且風味會隨著熟成更加深邃的絕品清酒。
