Zero dosage sparkling wine (also known as Brut Nature or Pas Dosé) is a different story. It is the wine in its most honest, unadorned state. No added sugar. No balancing act. Just the grape, the soil, and time.

If It's "Zero Dosage," Why Isn't the Sugar Zero?
You pick up a bottle labeled "Zero Dosage" or "Brut Nature," flip to the back label, and see: Contains 1–3 grams of sugar per liter.
"Dosage" is a winemaking step, not a measure of result. In traditional Champagne making, after the second fermentation in the bottle, the yeast dies (the lees). The winemaker removes this sediment and then adds a small amount of sweetened wine called the liqueur d'expedition to top up the bottle. That addition is the dosage. "Zero Dosage" means: The winemaker adds zero sweetened wine. They skip the sugar step entirely.
So where does the sugar come from?
It was already in the grapes to begin with. When grapes are pressed, their natural sugar (fructose, glucose) is meant to turn into alcohol. But even the best fermentations leave behind a tiny, trace amount of Residual Sugar (RS) . Legally, for a wine to be called "Brut Nature" or "Zero Dosage," the European Union laws allow up to 3 grams of sugar per liter. Those 1–3 grams per liter are not "added sugar."

你拿起一瓶標示「Zero Dosage」或「Brut Nature」的酒,翻到背面標籤,看到:每公升含 1–3 克糖。「Dosage(添糖)」是釀酒的一個步驟,而不是最終糖份的量測結果。
在傳統香檳釀造法中,瓶內二次發酵完成後,酵母會死亡(形成酒渣)。釀酒師會移除這些沉澱物,然後加入少量加糖的葡萄酒(稱為 liqueur d’expedition)來補滿瓶子。這個添加的動作就是 「Dosage」。
「Zero Dosage」 的意思是:釀酒師 沒有加入任何加糖的酒液,完全跳過了加糖步驟。
糖是從哪裡來的?
它原本就存在於葡萄之中。葡萄壓榨後,天然的糖份(果糖、葡萄糖)應該轉化為酒精。但即使是最好的發酵過程,也會留下極微量的 殘糖(Residual Sugar)。根據歐盟法律,要標示為「Brut Nature」或「Zero Dosage」的酒,允許最高 每公升 3 克糖。
