The Story: Zero dosage champagnes often requires some bottle age to become more mellow and show its best but luckily Agnès Corbonhas already done that for you. This non vintage release has been aged on lees for more than 5 years in bottle before disgorgement!
With a total annual production of only 10,000 bottles of Champagne per year, the style of the winery is simple but unique, Only the "Cuvée" of the pressing is used (the first 82 litres from 160 kg of grapes, compare with the remaining 20 litres called the taille. Champagne Krug is one of the few others who do this) and no malo-lactic fermentation is used at all, giving the Corbon hallmark elegance and lively acidity.
Because of the good ripeness of grapes, effect of the "Cuvée" and extended aging time of the wine, the acidity of the wine is well balanced and this must be one of the best example of zero dosage Champagne in the market.
Agnès Corbon only begin to make the cuvée "Absolument" recently, in the past, they only make a version with 5 g/l dosage, known as cuvée "Anthracite" (labelled as " cuvée "prestige" before). With better viticulture practices and the increasingly warmer vintages, Agnès decided to bottle part of this cuvée with zero dosage and having tasted the two wines side by side, we cannot agree more on her decision!
