The tradition of making wine from dried grape can be dated back to thousands years ago from the Mediterranean civilizations. Grape and wine conservation is a key issue in ancient world, and is a challenge for wine to travel from its place of origin. Dried grapes produce alcohol and sweetness that contribute to natural stability – and they taste great to the ancient palate. Most of the finest wines celebrated by Greek and Roman writers are by dried grapes.

Dried grape wine is not only about losing water and increasing sugar concentration. Studies have confirmed that during the drying process, acids and polyphenols (多酚/多羥基苯酚), sometimes also the botryris, contribute to the wine's transformation.

We have put together some of our dried grapes wines, mostly from Italy. Thanks to technology, in 21^st century we do not drink dried grapes wine out of conservation but for enjoyment and re-discovery of the past. Let us discover how modern winemaking gives new life to this ancient art.
