Winemaking: Alcoholic fermentation and malo-lactic fermentation in oak barrels, elevage 10 months in oak. Aged 9.5 years on lees, bottled with on fining, no filtering, and no cold-stabilisation. March 2021 disgorgement with 3 g/l dosage
