Les Volies Cuvée is only produced when the Pinot quality is at its best. All of the vinification takes place in a demi-muid (600L barrel). Les Volies has a beautiful effervescence and a fine foam. On the nose the champagne is intense, elegant, and complex, revealing delicate notes of butter, brioche, and a hint of spice that brings out the wooded vinification.
The wine then opens with notes of white fruits, pear, and peach. The mouth is full but very delicate with roasted flavours combined with honey and citrus fruit.
This wine shows a lot of aromatic finesse and complexity with a long aromatic persistence. Les Volies is a gastronomic champagne.
Grape: 50% Chardonnay, 50% Pinot Noir
Winemaking: 100% cuvee, vinified in barrel. Aged 42 months on lees and disgorged manually with zero dosage
