From a plot of 82 years old vines in the single vineyard San Giovanni, this is the ultimate expression of Cesanese d'Affile. The grapes are destemmed and spent 20 days on maceration and natural yeast fermentation in wood. It is aged in oak for 12 months and 1 month in 54 liters glass demjohn for refinement.
When compared with the Piglio Classico, this has more red fruits and finesse, with a more elegant take on the terroir.
