Xarel.lo is grown in Cataluna in large quantities, and is mainly used in making Cava in the past. In recent years, there is an increasingly trend of making Xarel.lo to dry white wine. Xarel.lo is native to the Catalan town of Sitges near Penedes, and it is known for its good acidity, structure, and benchmark flavours of herbs and citrus.
