The star of the lineup is undoubtably the "118", a Chardonnay made from a plot of 118 years old vines in Mâcon-Bray (15% Franc de Pied). But do not miss the rare chance to compare the two single-vineyard Gamay side by side, as one is fermented by semi carbonic maceration (common technique in Beaujolais), the other by traditional Burgundian techniques.
All white wines are fermented in stainless steel with no oak treatment to preserve the freshness, while the red wines undergo Élevage in neutral oak barrels to add complexity.
