The concept of "bistrotage" is "multi-vintage blending" with zero dosage. The B08 release is a blend of the 2008 vintage (base wine) with 2006 and 2007. The vin clair (still wine after primary fermentation) undergoes tirage (addition of yeast mixture for secondary fermentation) in 2009 and the current release is disgorged in 2016, after aging on lees for 7 years. A classic and majestic champagne.
