From 25 years old vineyards around Chavany and Verin, the latter just next to Chateau Grillet. 100% Viognier grown on decomposed quartizitic granite soil. François like to pick his grapes quite ripe, and after pressing, the wine was fermented in the barrel at low temperature with natural yeast. The wine then undergoes a labour intensive batonnage (1 time per week for 6 months), before ageing on lees without racking for 11 months. 20% new oak for this cuvee. Around 14,000 bottles produced.
DECO comments: This is quite exotic, with apriot skins and ginger spice on the nose, great minerality on the silky palate.
