Eiswein 12.12.12, Trittenheimer Altarchen, Weingut Loersch, Mosel, 2012
Heathly, non-botrytis grapes were selected and left on the wines to freeze during winter. On 12.12.12, the frozen grapes were hand picked, and pressed immediately. Sugars, and extracts from the grapes do not freeze, while water does. This allows a very concentrated grape must to be obtained as a lot of the water is excluded. Alexander only uses natural yeast fermentation, resulting in a refreshing desert wine with great complexity.
