Vincent Charlot is among the small group (less than 1%) of biodynamic growers in Champagne. All of his 4 ha of vineyards are Demeter certified. Vincent has very old vines (60+ years old) at his disposal. With biodynamic as his tool, he is able to harvest grapes at perfect ripeness, making intense flavoured, full-bodied sparkling wines which some may think as a controversial Champagne.

No malo-lactic fermentation is used at this address. Vincent relies on biodynamic, late harvest, and strict selection (we witness vineyards with only 30% of the grapes being picked) to produce perfected grapes with sufficient ripeness and intensity to balance the refreshing acids in the wine.

Treat these as table wine with bubbles rather than a sparkling wine. We recommend decanting, or doing a slow-ox (pour a glass out from the bottle, then put on a champagne stopper, and leave it for more than 4 hours before serving). These are wines which require time, care and attention.
