Nowadays, less than 20 champagne houses are still making Oeil de Perdrix Champagne...

 
 

A beautiful lightly coloured Rosé Champagne. The name "Oeil de Perdrix" means "eye of partridge" in French a reference to the pale pink colour of the eye of the bird in death throes.

This is made by the "direct pressing" method, but only grapes with optimal ripeness is used (possible because of great vineyard site, and selection in vineyard and in sorting table after picking), giving an unique light pink tint to the wine.

Nowadays there are less than 20 champagne houses that are still able to produce a Oeil de Perdrix Champagne. It is known for its fascinating pale salmon pink colour, creamy texture, and vibrant palate.
